Buttery, fragrant WHOLE ROASTED CHICKEN from an expert chef-dad | Winning Mealtime
Our friend Morgan McGlone has cooked a lot of chicken-or "chook," as they call it in Australia, where he's from. He's a hell of a chef and restaurateur, as well as an excellent father to his son, Ryo. In this episode, he talks us through his roast chicken method, which, spoiler alert, involves a lot of butter. This is a bit of a long cook, so it's more of a weekend dish, but nothing beats breaking into a whole chicken with your family. The kids get to see food in its whole form, and pick the pices they want. The only decision you have to make is whether to share the best bits, or save them for yourself.

I've never cooked lobster tails but I will try it on skewers like what David did to keep it from curling into itself. No idea how to make my own lobster butter though. Maybe boil the lobster shell in butter to infuse the flavor, let it cool.

Smuggling butter
Made the gnocchi recipe tonight. The flavor was very good, but I struggled mightily with the preparation. The dough came out of the mixer sticky to the point that it was almost impossible to work with. Maybe one too many eggs?

In Sweden we buy this premix of the dry ingridiens in a bag and then just mix it with melted butter and water and let it hang out in the fridge a bit before making them. So for us hearing that it´s hard to do and kind of an exotic thing like Chris is making it out to be is kind off funny, even kids can make them with ease here.
I feel called now to make waffles for my kids for dinner tonight! Yum!

Only tool needed to pound chicken is ball of the thumb, wrap your chicken with plastic or parchment first, then gently/firmly make chicken same thickness/thinness. Not Hulk smash, mind you; Chris said "feather it out." Love ya, Mr. Chris, and thanks for another chicken dinner winner. 😄

there is a residue in soju that you can get rid of in this way. not sure if the residue is yeast or something else
The process shown was originally to remove cork residue from back when soju was closed with cheap corks.
